Soaking nuts and seeds
Any size nuts and seeds can be soaked and dried except chia seeds, which can be soaked in small amounts for consumption in a day or two. It is necessary to soak nuts and seeds for at least over night to neutralise lectins and anti-enzymes, enzyme inhibitors. Lectins are like poisons to protect plants. Anti-enzymes stop nuts and seeds germinating before contacting water. Both cause hidden poisoning on the long run. Soaking neutralises both of them. Additionally soaking causes nuts and seeds to create new enzymes and phytonutrients, potent antioxidants.
Nuts and seeds carry chemicals and insecticides used in the field. This is including organic ones because of cross contamination by insects and wind. To get rid of them, soak the nuts or seeds for about five minutes in vinegar, if affordable, otherwise use strong salty water. After 5-minute soaking, get rid of vinegar/salty water and wash the nuts under running tab water. .
Prepare and amount of nuts or seeds, organic is healthier. Prepare an amount of filtered water about twice the size of nuts/seeds and enough to fill the container to a point 1 cm lower than the edge of the container. Use a dark glass or stainless steel container. The water contains air, oxygen, which can oxidize the nuts/seeds. To get rid of it, bring the water to boiling in a kittle and let it to boil for about five minutes. .
Fill the sink with cold water, put the kittle in the cold water and move it forward and backward until it becomes cold. You may need to change the cold water in the sink once or more. Once the water becomes cold, pour it into the container with nuts or seeds in. Add sea salt to the water and mix it. Taste the water. If not salty a bit add more sea salt until becomes a bit salty. Cover the water with non-stick backing sheet. Cover the container with clink film. This is to protects the nuts/seeds from air, which have oxygen that can oxidise the nut/seed during soaking. In the morning, drain the nuts/seeds and wash them under cold water running tab. .
Spread the soaked nuts and seeds in a large tray and leave in a dark aerated place to dry..
Chia seeds immediately expand and become a gel after contacting water. So it may not be possible to clean them from field contaminants with vinegar or salt.
This problem may be over come with an amount of water, may be about 1/5 of the size of the seeds. Add some sea salt to it to make it salty enough. Add the salty water to the seeds and mix it quickly. This should at least neutralise the contaminants. After ten to 20 minutes add more pure water to it to neutralise salty test and for the seeds to expand and ready for consumption..
Keep dried soaked nuts in a refrigerator. But first put them inside a paper bag and put it in a plastic bag. Fold both bags airtight and put rubber band around them. As long as the nut/seeds don't contact air, they remain healthy for a long time..

One may consider not to add salt when soaking nuts and seeds. In this case, they sprout or germinate. They become supperfoods. But consume them within a week.
